The food and beverage manager will manage all areas relating to food and beverage within the Hotel.
•Responsible for helping to maintain a customer-focused culture which supports the company ambition and business goals.
•Establishing and maintaining effective and positive relationships within the team as well as other departments.
•Complies with the company’s health and safety and hygiene policies as well as other resort policies and procedures.
•Report all situations that may present a danger to guests or staff immediately and take action to rectify the situation if possible.
•Ensure that resources are used effectively, minimising waste to protect the environment and reduce costs.
•Responsible for regular dissemination of information which is to encompass organisational and individual activities.
•Responsible for monthly, quarterly and annual budgets in conjunction with the Senior Executive team.
•Responsible for maintaining all Standard Operating Procedures within the department.
•Responsible for setting controls relating to the above set standards.
•Responsible for implementing key performance indicators for the department based on the controls devised.
•Responsible for defining, implementing and maintaining a sound organisational structure within the department/
•Responsible for defining and documenting job descriptions and person specifications and managing the HR aspect of the department.
•Responsible for the recruitment, management and disciplinary process in conjunction with the HR department.
•Responsible for the welfare and wellbeing of all departmental employees.
•Responsible for ensuring that all staff appraisals are conducted routinely and effectively for all employees within the department and that the results are actioned where required.
•Ensuring that the highest levels of standards are achieved in the F&B areas.
•Monitoring and coaching the team as appropriate ensuring outstanding standards of service.
•Supervising the day-to-day operation of the outlet.
•Conducting employee orientation, performance coaching and counselling.
•Inspects outlet prior to opening and conducting pre-meal meetings with the team on a daily basis.
•Maintains knowledge of and ensures strict adherence to all legislation relating to the sale of alcohol.
•Acting responsibly with intoxicated persons and those known to be driving.
•Ensures grooming standards are met.
•Communicates with the Head Chef regarding customer comments and service standards.
•Initiates new ideas with the menu and beverages, specials, decorations, and discusses these with the Hotel Manager prior to implementation.
•Ensures proper stock of all items for daily operation.
